Soya chunks — also known as textured vegetable protein or TVP — are one of the most useful ingredients in a vegetarian or vegan kitchen. Made from defatted soy flour, they're high in protein, virtually flavourless on their own, and have a meaty, chewy texture when rehydrated that makes them an excellent substitute for meat in curries, stews, and stir-fries. They absorb whatever they're cooked in, which means the flavour is entirely up to you.
In South Asian cooking, soya chunks are a staple — simmered in a spiced tomato and onion gravy for soya chunk curry, added to biryani in place of meat, or tossed with spices for a dry preparation. They work equally well in a Chinese-style stir-fry with soy sauce and ginger, or in a Mexican-spiced filling for tacos and burritos. Rehydrate in hot water for 10–15 minutes, squeeze out the excess moisture, and cook as you would any protein.
