Pressed in October from the first olives of the season — still green, still full of life — this is a super early harvest oil that captures the grove at its most vivid. The polyphenol count of 1,504 mg/kg puts it firmly in exceptional territory, well above what most premium EVOOs achieve even in a good year.
This is a single-varietal Arbequina, which means the flavour is all about the olive itself: green almond, tomato leaf, dried herbs, and a radiating pungency that builds on the palate and lingers elegantly. It's technically a very strong oil — intense and antioxidant-rich — but balanced by a remarkable freshness that keeps it from feeling heavy.
